Bubble & Squeak

Bubble and squeak is one of life’s great pleasures, it’s totally delicious, feeds a crowd and obviously brilliant for using up any leftovers!

What You Need:

The ingredients for the bubble is all down to you and what you have left over from your Sunday/ Christmas feast - we would suggest a combination of any of the following leftovers:

Roast potatoes

Mashed potatoes

Roast veggies like carrots, parsnips, butternut squash, celeriac, leeks and onions

Roasted or steamed sprouts

Cabbage

Any crispy herbs or whole roast cloves of garlic from the roasting trays

For topping:

A large handful or two of cheese, some pumpkin/ sunflower seeds or breadcrumbs for a crunchy topping!

Let's Get Cooking:

1. Pre-heat the oven to 180c/ 350f/ gas mark 4.

2. Roughly chop your veggies etc and add them all into a large bowl or saucepan.

3. Roughly mash everything together with a potato masher until your veggies are a big jumble.

4. Warm some olive oil & a knob of butter over a medium to low heat in a large frying pan and spoon in the mixture. Allow to gently cook until the bottom becomes golden turning occasionally so not to burn - don’t rush this, allow the veggie mixture to go a lovely golden colour.... this brings out the taste!

5. After about 20 minutes of cooking and turning, transfer the bubble mix to a heat proof serving dish. Scatter the top with your cheese, seeds, breadcrumbs (or both!) and pop in the oven to bake for 20-25 minutes.
