Cauliflower Dahl

This is a delicious Dahl. Mildly spiced but full of flavour and perfect served with warmed flatbreads.

What you will need:
1 cauliflower washed snd shredded
2-3 red onions
2-3 cloves of garlic
2 or 3 big handfuls of spinach (or frozen spinach which is fab)
1 tin of coconut milk
1 tbsp mild/ medium curry powder
1 tin cooked lentils or 1 cup of dried (cooked following instructions on pack)
Olive oil or cooking oil of choice
Flaked almonds or cashew nut for serving
Let's cook:
1. Peel and finely slice the onions and garlic and have them ready to cook with.
2. Put a large saucepan or deep frying pan over a medium heat and pour in 1 tablespoons of olive oil. Scatter in the onions and garlic, stir them into the oil and allow them to sizzle for 10 minutes until then soften and start to caramelise around the edges. Add a splash of water if they start to stick, rather than adding more oil.
3. Add your curry powder to the onions and garlic. Stir together
4. Add the cauliflower to the pan, with the lentils & coconut milk. Mix everything together, pop on a lid and allow to simmer for 15 minutes stirring now and then.
5. Have a little taste to check that you are happy with the seasoning.
9. Finish with your spinach leaves and fold into the Dahl.
Serve in warm bowls with a sprinkle of almonds or cashews.
