Loaded Veggie Nachos

These loaded nachos are hands down the BEST sharing food for everyone to tuck in to something delicious! Crunchy nachos topped with spiced beans, melted cheese, a fresh zingy salsa and a chilli kick AND they're so easy to put together!

What you will need:

1 x bag of tortilla Chips

1 x can of black beans washed and drained

1 x white or red onion, finely chopped

2 x garlic cloves chopped or crushed

1 x tsp cumin seeds

1 x tsp paprika

A few handfuls of cheese of choice

3 x tbsp yogurt or creme fraiche (I use dairy free)

Optional - spicy sauce like sriracha/ jalapeno

1 x lime


For The Salsa:

1 x red onion, finely chopped

1 x red or green chilli deseeded and finely chopped.

1 x handful fresh tomatoes chopped

1 x lime

1 x avocado

Olive oil

Salt & pepper to season


Let's put it together.

1. Start with pre-heating your oven to 180c / 360f / gas mark4.

2. On a lined baking tray, lay out your tortilla chips and pop to one side.

3. Grab a shallow pan and put it on a medium heat on the hob or stove.

4. Add 1 tablespoon of olive oil to the pan followed by the chopped onion and garlic then let them cook for a few minutes before adding your black beans.

5. Time to give them a kick… add the cumin seeds and paprika. Stir together and let cook for 5 mins, stirring regularly.

6. Get your tray of nachos and sprinkle over half your grated cheeze.

7. Now add your beans from the pan - these can be roughly scattered leaving some nachos with no topping around the edges (like the crust on a pizza).

8. Top with rest of your cheese and pop in the oven to bake for 10 minutes until cheese has melted and the outer nachos are lovely and toasted.

9. Whilst they are cooking - make the salsa.

10. In a medium to large bowl, add your chopped red onions, tomatoes and chilli. Squeeze in the juice from a whole lime into the bowl followed by a tablespoon of olive oil. Season with salt & pepper and give a good mix and of course taste. This should be super punchy.

11. Remove your nachos from the oven - Now time for the fun bit.

12. Scatter your salsa over the cheesy nachos. Top with chopped avocado, lovely dollops of yoghurt or creme fraiche and wedges of lime.

Add more topping however you fancy like fresh herbs, spicy sauce or extra chilles… Make them your own!

Serve in the middle of the table and tuck in!
