Paprika Potato Salad With Roasted Garlic Dressing.

Salads sometimes have a bad rep of being boring & not filling… well not this salad! We’ve packed in satisfying potatoes, crunch and a delicious roast garlic dressing and it’s very simple to put together - you’ve got to give this one a go!

What you will need- to serve 3-4 people:
2 medium to large potatoes
2 cloves of garlic
1-2 tsp smoked sweet paprika
1 red onion
1 red pepper
2 big handfuls of rocket leaves
The juice of 1 lemon
Olive oil
Sea salt and black pepper
Let's cook:
1.Pre-heat the oven to 180c / 320f / gas mark 4.
2. Wash, dry and roughly chop the potatoes into bite-size chunks. Scatter them onto a baking tray, sprinkle over the paprika, a pinch of salt and drizzle over a couple of teaspoons of olive oil. Tumble the potatoes until they’re all well coated in the oil and paprika.
3. Place the unpeeled cloves of garlic on a board and with the side of a knife, carefully crush it by giving it a knock with the palm of your hand. Tuck the crushed garlic into the potatoes then put the tray in the oven. Pop this into the oven and let roast until they’re tender in the middle and turn crispy around the edges.
4. Grab your pepper & remove the green stalks and seeds. Roughly chop the pepper about the same size as the potatoes. Peel the red onion, trim the tip and root then slice as thinly as possible. And set them aside.
