Roasted Cajun Tray Bake

A deliciously simple one pan meal - This pile of tasty Cajun spiced roasted veggies and tofu can go from the oven straight to the table, making this a triple win… healthy, delicious and SO simple!

What you will need: Use this as a guide. Butternut squash, Aubergine, potato, fennel, chickpeas or beans would also be delicious.

1 block of firm tofu - chopped into chunks

1 to 2 x red onions roughly chopped

1 courgette roughly chopped

1 pepper roughly chopped

Some cauliflower broken into pieces

1 sweet potato - (doesn’t have to be peeled) washed and chopped into chunks

Olive oil

A lemon

A handful of tomatoes (if you haven’t got fresh, sun-dried will be lovely)

2-3 garlic cloves

1-2 tbsp of Cajun spice (depending how spicy you like it)


Lets Cook:

  1. Get the oven nice and hot at 180 gas mark 4.

  2. You will need a roasting tray or dish.

  3. Simple tumble all your chopped veggies into the dish.

  4. Tuck the garlic cloves into the veggies along with the lemon (cut in half or chunks)

  5. Sprinkle over a drizzle of olive oil, salt & pepper and your cajun spices - make sure all the spices cover your veggies, you can give these a gentle mix.

  6. This is now ready for the oven.

  7. Let this cook for 30- 40 minutes until the veggies are deliciously gooey and the tofu is lovely and golden.

  8. Serve straight to the table as it is!

Delicious with crusty bread or some nutty wild rice - Enjoy!
