The Simple Spud

There is something hugely comforting about a jacket potato - hot, humble, budget and time friendly - the ultimate 'eat well for less meal'!


They take minutes to prep leaving the oven to do all the hard work then you can pile in your favourite filling for a delicious hug of a meal.


What you will need:

1 big potato per person

Olive oil

Sea salt


Let's get cooking:

1. Pre-heat the oven to 180c / 360f / gas mark 4.

2. Give the potatoes a good scrub & them dry with a tea towel.

3. Prick each potato all over a fork. With a sharp knife, carefully score a cross on the top of each potato.

5. Drizzle the potatoes with a little olive oil and sprinkle them with sea salt. Rub each potato all over to evenly spread the oil and salt.

6. Place the potatoes on a tray and put them in the oven to bake for 1 hour 15 minutes or until they are crispy on the outside and feel soft in the middle when you give them a squeeze.

7. Remove the potatoes from the oven and cut along the score lines then carefully open them up to reveal the soft fluffy potato!

8. Pile in your favourite stuffed filling and enjoy!
